Growing up I always saw ketchup covered meatloaf on TV and the Movies, My mom’s own version was pretty similar but it was not “smothered “ in Ketchup, My dad also had his own variation which included adding brown sugar to the ketchup for more of a “BBQ Sauce” style, but neither of these were meals I was racing home from school excited to eat.
Quite honestly I’m pretty sure both my brother and I had re-enacted the Randy Meatloaf Scene from A Christmas Story on more than one occasion while being served Ketchup Covered loafed meat.
Flash Forward to when I met and then married my husband who had never even been served Ketchup Meatloaf because his family always did their Meatloaf with Cream of Mushroom, this was a meal everyone in the family raced over for.
The internal ingredients of the Meatloaf have changed as our taste buds have developed more “sophisticated palates” by adding more diced veggies and more seasonings but it always remains topped with Cream of Mushroom and Never and I mean Never with Ketchup!

Wilson Family Meatloaf- Not Your Mama’s Meatloaf
2lbs Ground Meat
2 eggs
2 cups of bread crumbs (can be substituted for 1 sleeve of finely crushed saltines)
1/3 cup diced onion
1/3 cup diced green bell pepper *Optional*
Family Size can of Cream of Mushroom
Preheat Oven to 420 Degrees Fahrenheit
Combine and mix Meat, Eggs, bread crumbs , onion and bell pepper
In a well greased pan form “Loaf”
Bake for 35 Minutes
Remove from Oven, using a spoon drain some of the excess grease out of the pan
“Hasselback” slice your meat loaf
Using half your can of Cream of Mushroom top your meatloaf
Place back in the oven for an additional 10-15 minutes
In a small pan put remaining Cream of mushroom and a splash of milk and heat to simmer
Plate Meatloaf and use remaining cream of mushroom as “gravy”
