Your Simply The Best....Mashed Potatoes

Remember in Schitt's Creek when Patrick serenades David with an altered version of the Tina Turner Classic Simply The Best? Then David wanting to recreate and share in that same feeling with Patrick Lip Synced Simply The Best? I kinda feel like these Mashed Potatoes are the lip synced version of my grandmothers mashed potatoes same heart and soul but different.

Growing up I remember eating very few things- Canned Green Beans, Chicken Strips , French fries your usual childhood staples but I loved and I mean LOVED my grandmothers mashed potatoes.

Sadly she passed away right after my senior year of high school and I never got the opportunity to learn how she made them and it’s a recipe I have been chasing for years, despite my mother and aunts saying they knew how to do make them no one could recreate them…well that was until COVID hit and I sat down with my spiral notebook and Google at my finger tips and figured it out. Now I’m sure this isn’t her exact recipe but the taste and the feel of them are exactly the same, Maybe it had more to do with the love she put into it versus the actual recipe of it.

I know she would approve of them and I hope you do to- Now this is just a base recipe you can mix these potatoes up and make them with different flavors by adding garlic and chives or my boys favorite cheese and bacon bits or just plain with salt and pepper.

This specific recipe makes 10-12 servings so please half the recipe if you need a smaller batch

Remember to Wash Your Hands, Wear A Mask and Make Good Choices!

Enjoy!

Simply The Best Mashed Potatoes

5 Pounds Russet Potatoes

½ chicken bouillon cube

1 ½ TBS minced Garlic

6 TBS Butter

½ Cup Milk

½ cup Heavy Cream

4 Oz softened cream cheese

1. Peel and cut your potatoes- You can leave the peel on if you prefer, cut potatoes into even sized chunks

2. Place potatoes in large pot of cold water sprinkle sea salt and crumble chicken bouillon into the water and stir and allow potatoes to boil.

3. Drain Potatoes and return to the pot on low heat cook any excess water out of the potatoes add in minced garlic while cooking

4. Remove from heat and begin to Mash the potatoes- using a masher or a fork

5. Add in Butter and Milk continue mashing

6. Add in heavy cream and cream cheese

7. Continue to mash until there are no lumps- Or leave the lumps if you prefer I pretend I like the lumps because after mashing 5lbs of potatoes my arms go limp so my family has accepted the lumps * You can also use a hand mixer or immersion blender if you prefer a more whipped texture*

8. Add Salt and Pepper to Taste

9. Return to a low heat and Serve warm
