Now Here Me out on this one; Fries are made from potatoes, Potatoes are technically a Vegetable so therefore fries are a Veggie. We deep fry Okra and Green beans and those are still considered vegetables despite being battered and fried in oil.
In my quest to make Fries a legitimate vegetable I realized I needed to serve a better fry than the bag of frozen fries that usually graced our table.
I learned russet potatoes had a better taste while Yukon Gold Potatoes had the more traditional take out fry look.

Fries are a Fried Vegetable...I said what I said
5-7 Russet Potatoes Washed and Peeled
Bowl of Water
Preferred Frying Oil- I like Vegetable Oil
Sea Salt or Kosher Salt
Pepper
1. Cut Potatoes into Fry Shapes- Trying to keep the fries as evenly sized as possible this will help insure even cooking times
2. Soak Cut Potatoes in a medium bowl full of water- This helps remove the excess starch from the potatoes which helps them fry better
3. In a Hot Sauce Pan Heat up Oil on high heat– be sure to use enough oil that will cover your fries completely
4. Cook halfway thru, remove fries from oil and allow to drain on a paper towel- Lower to medium heat on the oil
5. Once the oil has cooled off from High Heat to a more medium heat- Return fries to the oil
6. Cook thoroughly , once the fries are a light golden brown color place on clean paper towel to drain excess grease off- Top with Salt and Pepper to taste
