Living in South Texas the thought of typing up a “Nacho Recipe” seemed honestly redundant but after talking with friends and family I realized even we all don’t do it the same….some of us don’t even do it all despite their love of nachos they just assumed they could never recreate the awesome-ness that is Restaurant Quality Nachos at home.
Growing up my mother routinely made “Nachos” when she would come home from a trip to the grocery store, Tostitos Restaurant Style Chips, Velveeta Block Cheese and Pickled Jalapenos…..but once I married my Hispanic husband he politely explained to me that those were not nachos…they were cheese chips with jalapenos.
I think the most complicated part of making nachos is honestly the refried beans, they have to be a smooth enough consistency to easily put on your chips but not so liquid-y that it makes your chips soggy.
Something 2020 taught me was I can be a bit of a “brand snob” when it comes to certain products like toilet paper or paper towels (Angel Soft and Bounty ONLY), and Kraft Shredded Cheese, particularly the Triple Cheddar- Our Local H-E-B does make their own store brand version of the triple cheddar but there is just something about the texture and the taste of the Kraft brand.
While Mr. Wilson and the Oldest eat their Nachos Plain (Chips, Beans, Meat and Cheese) and the little one only eats cheese chips (despite Bean and Cheese Tacos being his ultimate favorite food I can’t convince him that bean and cheese chips would be equally good I digress); I love to load my nachos up with fresh lettuce and Tomatoes, Fresh made H-E-B Pico De Gallo, Sour Cream, Guacamole or my current personal favorite is the Tostitos Avocado Salsa I put it on EVERYTHING. For this recipe specifically I am using ground beef, I think this is the only meal that I can make 1lbs of ground meat stretch to feed all of us. The best part of Nachos is that you can usually do it with anything you have in your fridge and wind up making a bomb ass meal- Left over Brisket? Throw it on, Left over Chicken, Fajitas, Pork, and Bacon? Toss it on the possibilities are endless

Quick Simple Nachos
1 Bag Tortilla Chips
1lbs Ground Beef
16oz can of refried beans
1 bag shredded cheese
3 tablespoons Taco Seasoning
1 Tablespoon of Season-All
1 tsp garlic
¼ c up diced onion
Toppings
Lettuce
Tomato
Pico De Gallo
Sour Cream
Guacamole
1. Preheat Oven to 350 Degrees – Line Cookie Sheet with Tinfoil or Parchment Paper
2. Add Onions and Garlic into a medium saucepan, once soften add ground meat and brown
3. Drain Grease
4. Add Taco Seasoning
5. Open Can of Refried Beans – Add in Season all and heat until thoroughly warmed
6. Add sprinkle of cheese to beans to help make beans more spreadable
7. Place Tortilla chips on your lined cookie sheet spread out as much as possible so chips aren’t hidden underneath each other.
8. Place spoonfuls of refried beans on chips- spread with a spoon or spatula
9. Top beans with taco meat
10. Sprinkle cheese on top
11. Place in the oven at 350 Degrees for approx 10 min on until cheese is melted
12. Top with your choice of veggies and salsas, sour cream and guacamole
