Not Enough Bananas or 3 Overly Ripe Ones No in between- Strawberry Banana Bread

I love Bananas, like legitimately love them; they are a great snack for that sweet tooth craving without compromising any health goals you have and did I forget to mention how incredibly inexpensive they are? At roughly $0.18 per lbs in my area you can’t go wrong picking up a bunch of bananas.


Now I’m sure my household isn’t the only household to have this problem but I can’t seem to find the “Right Amount” of bananas to buy because my children either eat them like they will never eat another thing or they leave them until they have so many brown spots they won’t even touch them.


To be honest my children won’t touch the banana with a 10 ft pole if it has the slightest brown spot on it, which means I typically have at least 3 or 4 bananas at the end of a week which is perfect because I love banana bread (I mean my love for bananas extends to baked goods).


Recently I discovered these Hydroponic Strawberries on sale at H-E-B; these were the best looking strawberries I had ever seen and I went to Google to figure out what exactly was making these strawberries so special.


Strawberries have grown in soil for centuries. However in 2021, berries can be grown hydroponically meaning with no dirt. In a hydroponic system there is no soil -- strawberry plants are grown in a water-based nutrient solution. The nutrients that plants would typically draw from the soil are instead added directly to water supply for a more direct path.


So I decided to combine these strawberries with my overly ripe bananas and make a sweet little treat.

This recipe makes a large quantity so if it’s more than your family can eat, you can freeze or give them away to neighbors.

Strawberry Banana Bread

-This recipe filled up 4 - 8 x 3.875 pans


3-4 Ripe Bananas

2 Cups of fresh chopped strawberries (lightly coated with flour)

1 stick of butter (softened)

4 Cups of Flour

2 Cups of Sugar

4 Eggs

2 tsp baking soda

½ tsp of salt



1. Preheat Oven to 375

2. Combine Butter and Sugar using a mixer on medium to low speed

3. Mix in Eggs, Baking Soda and Salt

4. Slowly add in Flour and mix



5. Add in Bananas and Strawberries and blend together be careful to not over mix as this will create a dry bread.

6. In greased bread tins pour in batter about ½ way up



7. Bake for approx 35 minutes Allow to cool and then serve or freeze for up to 3 months
