Cookies Make Everything Better- Chocolate Chip Pudding Cookies and M&M Cheesecake Cookies

Making Cookies is one of .....OK if I'm being honest EATING cookies is one of my favorite things, and making cookies is a requirement typically of eating really great cookies.




I love using the summer to test and figure out the up coming Holiday Season's cookies- Also this year we are going to be entering a few recipes into our local county fair, its something I remember doing as a kid a few times although I'm pretty sure we only entered items to get the free entry ticket to the fair and to see our name get published in the local paper.


I saw online about using instant pudding mix to help add some extra flavor and oomph to your traditional cookies. So I decided to give it a try with my regular chocolate chip cookie recipe and when I say the results were beyond impressive it doesn't even fully describe how great these cookies were.

From there my mind went wondering what different combinations I could come up. My youngest has a deep love of the rainbow cookies (i.e M&M Cookies) and I along with my oldest and my husband have a love of Cheesecake soo I decided on M&M Cheesecake cookies! My oh my the flavor this produced I honestly felt like I stumbled upon some small town award winning bakery's cookie secret....when in reality it was just a Facebook post I happened to stumble across that sparked an idea that is still growing- I've been requested to make peanut butter cookies next (Recipe for those here - https://seriouslysarahw.wixsite.com/saucinwithsarah/post/easy-peasy-pb-cookies ) BUT after that I think I'm going to work on a chocolate mint and a hot chocolate cookie to get ready for Christmas...Car Lot's do Christmas in July sales so why not test out Christmas cookies in July?

Chocolate Chip Pudding Cookies


Ingredients


2 1/4 Cup All Purpose Flour

1 Teaspoon Baking Soda

1 Cup Softened Butter

3/4 Cup Brown Sugar

1/4 Cup White Sugar

1 3.4 oz box of instant vanilla pudding mix

2 eggs room temperature

1 tablespoon vanilla

2 Cups Semi Sweet Chocolate Chips


Directions

  1. Preheat Oven to 350 Degrees

  2. Whisk together flour and baking soda -set aside

  3. Cream together butter and sugar

  4. Add Flour mixture and stir in pudding mix

  5. Add in eggs and vanilla mix well

  6. Gently stir in chocolate chips

  7. Use a spoon or scoop to drop cookie dough on a parchment lined (or well greased) cookie sheet approx 2" apart

  8. Bake 11 Min

  9. Place on wire rack to cool and serve



M&M Cheesecake Cookies

Ingredients

2 cups mini M&M's

  4. Add Flour mixture and stir in pudding mix

  5. Add in eggs and vanilla mix well

  6. Gently stir in chocolate chips
