Easy Peasy PB Cookies

So it was a Saturday night, We watched a movie as a family and then IT hit…that 9 pm sugar craving! Now normally we’ve got ice cream or something to satisfy that craving however I submitted my curbside grocery order late so the pickup wasn’t scheduled until Sunday Morning blah blah basically I thought man I'm gonna have to run up to the corner store to get an ice cream bar or somethin. At this point it was 9:30pm I was in my PJ's and my slippers so I knew I wasn't going out. So off to the kitchen I went to see what I could mix up quick.

Well I had Peanut Butter, I had Mini Chocolate Chips , I had eggs but I didn’t have white sugar…however I had brown sugar so I made Peanut Butter Chocolate Chip Cookies!


In most cases you can substitute white sugar for brown sugar; it can often lead to a sweeter taste in your baked goods and can slightly change the texture.


The great thing about this quick mix Peanut Butter Cookie you can swap it out and add so many different things to make them your “Signature” Cookie. Like Oatmeal Cookies? Throw in a half cup of old fashioned oats, Like M&M Cookies? Throw in a handful, The possibilities for substitutions on this recipe are endless.




While we are Peanut Butter People in this house I know many families are a nut free home so this recipe you can easily swap the Peanut Butter for your preferred PB alternative like Sunbutter or Wow Butter and your family will love it!

These cookies were just what I needed to curb that sweet tooth, I guess sometimes Moms are right….We do have food at home.

Easy Peasy Peanut Butter Cookies

1 Cup of Sugar

1 Cup of Peanut Butter ( We love the Honey Roasted Peanut Butter from H-E-B)

1 Egg

Optional- Chocolate Chips/Old Fashioned Oats/M&M


Step 1- Preheat Oven to 350

Step 2- Combine Peanut Butter, Sugar and Egg – Mix together on low

Step 3- Mix in any optional ingredients of your choice- I use a spoon and mix by hand to avoid broken chocolate chips/ M&M’s

Step 4- Roll into small balls and place on a parchment lined cookie sheet



Step 5- Use a fork to create a criss cross pattern and flatten your cookie ball down.



Step 6- Bake at 350 Degrees for approx 9 minutes and enjoy!
