Quick, Easy and Cheap is the name of the game folks!
I totally understand why moms in the 80’s and 90 have relied so heavily on frozen meals and hamburger helpers! More women were working outside the home than ever and they were trying to find the balance between work and home life and even here in the 20’s( Anyone else feel weird saying we are in the 20’s? I digress) it’s still a daily struggle between trying to be the Kick Ass Boss Lady in my career while trying to feed my family filling, semi healthy meals that don’t require me being in the kitchen until 9pm (Add in kids that play sports and your whole playbook goes out the window Coming soon I'll post some of my crock pot recipes if you fit in the Working Sports/Extra Curricular Mom category too)
So in the midst of my forever battle between wanting great food but not having the patience after working all day I found my husband’s childhood favorite and tweaked it some.
This is an almost weekly staple meal in our household because it is so simple to make and honestly an incredibly inexpensive meal.

Working Mom Stroganoff
Ingredients-
1 tsp vegetable oil
1 Package Egg Noodles ( I like the no yolk noodles but whatever is on sale usually wins)
1 Family size can of cream of mushroom
½ cup thinly diced onion
1lbs ground meat
Measure w/ Your Heart the following seasonings
1tsp minced garlic (Garlic powder works just fine too)
1tsp onion powder
1 tsp paprika
2-3 tsp italian seasoning
Splash of Milk (Thin out sauce to your preference)
Sprinkle of dried parsley *optional
Directions-
1. Boil Noodles and drain
2. In a separate pan warm oil and add in onion and garlic til softened
3. Brown ground meat use garlic powder and onion powder while browning and then drain grease
4. Add Ground Meat, additional seasonings to taste, Cream of Mushroom and
milk to noodles and let simmer for 5-10 minutes
5. Serve with side of green beans or side salad
