Goulash is defined as a soup of meat and vegetables usually seasoned with paprika and other spices. I say this because what I make and call goulash now as an adult is very different from the goulash my mother made and served me as a child.
Goulash, Slumgullion, American Chop Suey are all the same dish
the “Everything but the kitchen sink” dish in my opinion.
You take your protein, whatever veggies you have canned, frozen or fresh throw it in a pot of tomato sauce and boom you have a meal and you’ve cleaned out your pantry or cupboard Win Win. Granted the more additions I add the less likely my picky eaters will eat it so I like to keep it very basic. If your kids (and husband) will eat things like Lima or kidney beans or canned corn throw it in there it will taste Delicious!
The recipe I use for Goulash is a variation of the recipe Mr. Wilson grew up eating, I’ve substituted a few things, added a pinch of this and a sprinkle of that but ultimately it’s the same meal he grew up eating on a nearly weekly basis because it was so inexpensive but so filling, so its now one of our weekly staples because it is still so inexpensive and still so filling.

Family Goulash
1lb Ground meat
12oz Elbow noodles
1 tsp minced garlic
½ cup diced onion
2 tbsp Italian seasoning
28 oz Tomato Sauce
½ cup water
1 can diced Tomatoes *optional * Tip- don’t drain the can
1 tsp dried parsley *optional*
½ Cup shredded Cheese *optional* (For topping)
Boil your noodles and set aside
Add Garlic and diced onions to pot until onions soften
Add ground meat after cooking drain excess fat and oil
Pour in Tomato Sauce, and seasonings and diced tomatoes
Add in Elbow noodles and stir
Add water in to thin sauce
Bring to a simmer
Sprinkle dried parsley and Serve
**Top with cheese if desired **
