Sunday Breakfast Casserole



Easy Like Sunday Morning, except in my house Sunday mornings are like that lawn mower you have in the garage that takes a few attempts to get going. So we have definitely adapted a much more lax approach to meals on Sundays so while this in all technicality is a Breakfast meal it is more of Brunch closer to the Lunch side of meals. This meal is so filling that the kids eat it around 10:30-11:00 the kids wont even be asking for a snack until atleast 2 or 3 in the afternoon.

When I first made this the husband said it needed more meat, so I've also added bacon to it in the later rounds. You could also use Spam, or Breakfast Sausage or whatever your little heart desires. If I wasn't feeding the worlds pickiest eaters this recipe would have bell peppers, onions, spinach and tomatoes as well.

I think what my kids loved about this meal was that they are late sleepers and this meal was prepped and cooking in the oven before they even woke up. Much like Ron Swanson they have an obsession with fresh cooked bacon.

Breakfast Casserole

12 Eggs

1 Cup of Milk

Measure With your heart- Salt, Pepper, Garlic Powder, Cajun Seasoning

3 Cups of Frozen Shredded Hash browns

1 cup diced ham

1 cup shredded Monterrey Jack Cheese

1 cup shredded Cheddar Cheese

Optional Items-

Diced Onion

Diced Bell Pepper

Spinach

Chopped Broccoli

Breakfast Sausage

Bacon Pieces


Directions-

  1. Preheat Oven to 350 Degrees

  2. In a large bowl combine hash browns,diced ham(optional meats) and cheese

  3. Pour mixture into your greased casserole dish and pat down

  4. Mix your eggs and your seasonings(I use the same bowl from step 2**Less dishes**), add in optional veggies

  5. Pour evenly over potatoes and pat down

  6. Bake Uncovered for 1 hour

  7. Cut into squares, top with additional shredded cheese and hot sauce and Serve.
