Meat and Potatoes .......the ultimate meal starters , give a chef a pound or two of ground beef, some potatoes with a few minor additions they could make you the ultimate comfort food meal.
I am like most white Americans a Hodge podge of European Cultures but mainly Irish,Scottish and German and something about this meal just speaks within my bones to a deeper level than just a love for a meal.
Now a traditional Shepherd's pie has a minced lamb but lamb being not a common meat(therefore being expensive) this recipe uses ground beef, but that being said you could use whatever ground meat you prefer, turkey or pork could have a nice flavor to it.
One of the things I love about this meal is how ridiculously inexpensive it is to make, it takes a pound of ground meat, frozen veggies, and potatoes- which if you are in a budget bind or even just a time constraint using instant mashed potatoes works AMAZINGLY well for this dish. Ingredients-
1- 1 1/2 lbs Ground Meat
1/4 cup of diced onion
2 Cups Frozen Peas and Carrots (Or Frozen Mixed Veggies)
4 Cups Mashed Potatoes- Check You my Recipe Here
4 tbs Melted Butter
Seasonings Measure W/ Your Heart -
Salt
Pepper
Garlic Powder
Onion Powder
Paprika
Steak Seasoning ( I love the Fiesta Brand Piccadillo Ole' or McCormick's Monterrey Steak Seasoning)
Directions-
Make Your Mashed Potatoes and Set aside, Preheat Oven to 450 Degrees
In a Medium Skillet warm oil and add your onion until soft and translucent season with garlic powder
Add your ground meat and brown season with remaining seasonings and drain grease
Using a 9 inch Cake pan or any oven safe dish you prefer layer your ground meat and onion mixture on the bottom of the pan
Place your frozen veggies on top of the ground meat evenly layering
Generously Smooth your Mashed Potatoes over the frozen vegetables
Pour Melted Butter over top of the mashed potatoes
Bake for approx 25-30 minutes or until mashed potatoes have crisped and browned
