I am thankful that 2022 has not brought a freak winter snow storm to South Texas as 2021 did however that doesn't mean we have been without ridiculously cold nights.
Honestly whats better than a big bowl of warm beef stew on a freezing cold night? Other than it not being a Freezing Cold that is. I loved stew as a kid, my grandma made the best beef stew, and the meal was rarely the same as the previous meal. She would often throw in this or that because she had it on hand, green beans, corn often made there way into her stew pot and it was fine with me because it had so much flavor in it. Goodness I miss that woman but I don't have time or the patience to cook the way she did so I try my best to find little tricks and hacks to recreate the meals I loved but that fit my time and budget constraints.
Red Wine, Worcestershire Sauce are rarely items that I keep in my home and would go bad before the next time I had a recipe that called for them, so most from scratch recipes for beef stew I had found weren't something I could follow in our home.
So I picked up a "Beef Stew" Seasoning packet from my grocery store, my potatoes, and then went to get baby carrots for it, they were out, not a baby carrot, or a full size carrot to be seen so I grabbed a can of canned carrots and had I not planned on putting this recipe online no one would have ever known I used canned carrots in it. Purchasing Canned carrots at $0.48 vs a bag of baby carrots at $1.58 doesnt seem like a huge savings but for this specific meal it meant I had extra $1.10 I could use to get a larger portion of beef stew meat.
Now this was a meal my family loved, all except the little one because he does not eat beef(Personal Choice and we as parents are just rolling with it until he changes his mind) and it was perfect, we served it with Yeast Dinner Rolls because its what we had already in our freezer but $1 loaf of fresh french bread from the grocery store bakery would have been delicious with this as well.

Homemade-ish Beef Stew
Ingredients-
1 Package of Beef Stew Mix(I used Lawry's- Here on Amazon)
2 tbs oil ( I used Olive Oil)
2lbs Stew Meat
3 Cups Water
2 Cups of Small Potatoes- I used Frozen but you can use fresh or canned
1 1/2- 2 cups of Sliced Carrots- Fresh or Canned
1/4 cup of diced onion
2 tbs minced garlic
2 tbs steak seasoning
Directions-
Season your Stew meat with your steak seasoning and Heat pan with oil and minced garlic, add in stew meat- Brown all sides of the meat, drain fat if desired
Stir in Seasoning Mix and Water bring to a boil, stirring occasionally
Reduce to Low Heat, Cover and Let simmer for 45 minutes to an Hour stirring occasionally
Stir in Potatoes, Carrots, and Onion, cook for an additional 35-45 minutes until meat and potatoes are tender, remove from heat
Let Stand 5 minutes before serving
Serve with Dinner Rolls or French Bread
