The Trick is to under cook the onions- Texas Chili Recipe

Kevin spilling his chili all over The Office floor is honestly one of my favorite cold openings in the Office. So to understand the name of my chili recipe you probably needed to have watched this episode….might I suggest with a bowl of Chili?



As you will get to know the least amount of effort I have to put into cooking something on a weeknight but still have it taste like I’ve been locked away in the kitchen all afternoon is my jam.

Now I know here in Texas we can get specific “Chili Meat” ground meat at the local meat market but I still prefer my good ol’ ground chuck and I love my Fiesta Brand products (Not a paid Sponsorship…yet lol) -Some have asked why I don't put beans in my chili and truthfully I don't really like beans but mainly because I'm from Texas and Texas Chili does not have beans in it.

Don’t Spill the Chili Kevin

2lbs Ground Meat

½ Yellow Onion Diced

Half a green bell pepper thinly sliced ( Or Diced - Mr. Wilson doesn’t like Bell Peppers so being thinly sliced means he can avoid putting them in his bowl)

2 tsp minced garlic

2 tsp Italian seasoning

8 Tbsp Fiesta Brand Chili Mix

56oz Tomato Sauce

½ cup water

1 tbsp vegetable oil


Heat Vegetable oil, add yellow onion and garlic

Once Onions soften add in ground meat until cooked (The trick is to under cook the onions)

Drain grease

Return to heat- Add Tomato Sauce and spices

Stir in water

Bring to a Boil

Add in Bell Peppers

Simmer for 10 minutes

Garnish with Cheese and Diced Onions and Sour Cream (Optional)
